Many people consider khash made of beef feet and broth, as the queen of Armenian cuisine. It has purely an Armenian origin and is a very old dish, the name of which is originated from the word “to boil”.
Khash is not only for eating, it’s a whole ritual, from the long process of preparation to its tasting.
Khash is eaten only hot, adding salt, garlic and dried lavash. It is mainly eaten in cold weather early in the morning.
