Canning history: how the first canning technologies appeared
Canning has been known to mankind since the dawn of time, which is why it plays an important role in the preparation and storage of food and dishes.

What was the origin of the first industrial canning technology?


People have been concerned with the preservation of food since ancient times. The simplest methods of preservation arose at this time: salting, drying, smoking, and cooling, which are still used in industrial canning.

Excavations of Pharaoh Tutankhamun's tomb (Egypt) revealed one of the first methods of industrial preservation: an earthenware bowl embalmed with olive oil, dating back more than 3000 years. In ancient Greece, amphorae were used to store wine.

N. Appert, a French chef, pioneered canning in cans using boiling, reaching temperatures of 1000 degrees of Celsius. Appert was later honored with a state prize for his invention. In the 1820s, various machines for the automated production of cans were already being manufactured in Baltimore.

An effective method of sterilization was invented in the second half of the nineteenth century, inside a steam boiler at temperatures of up to 1350 degrees of Celsius.

Food preservation began to develop in Russia in the second half of the nineteenth century. Among the well-known canning factories of the time were those in St. Petersburg, Taganrog, and Simferopol.

Petros Esapyan established the first cannery in the Erivan province in the late nineteenth and early twentieth centuries. It was Transcaucasia's only cannery. The products of the plant were in high demand and were exported to Russia and Europe.

Contemporary technologies


Modern methods are increasingly being used in canning technology today, and automated control systems are being introduced to preserve the usefulness of the components. Sterilization is done in special autoclaves at temperatures above 1200 degrees Celsius, which contributes to the destruction of most microorganisms.

Welded cans give products a long shelf life (without changing their properties). Can lids are made of metal and coated with long-lasting polymer paint.

Canned products manufactured at the Sipan factory are distinguished not only by their distinct taste, but also by their nutritional value, mineral content, caloric content, and all other critical elements for the human body.
